Mentioned in the 18th century, bergamot sweets reappeared in the following century due to the friendship between a confectioner and a perfumer. Specialty of the city of Nancy in the Lorraine region, this sweet was a huge success at the International Exhibition of the East of France in 1909.
The recipe is based on the addition of natural essence of bergamot at the end of the cooking which is obtained after repeatedly squeezing the peel of the fresh fruit. The powerful scent gives this elegant sweet all its subtlety.
