Candied orange peel
The fruit preservation by candying appeared in the early Middle Ages and became a speciality of the small, French town of Apt-en-Provence.
The peels are candied in the traditional way by one of the last Provencal artisans mastering this preservation method. The oranges selected are thick, full of pulp and harvested at maturity in order to respect the subtle balance between acidity, sweetness and the taste of the fruit.
